Ingredients

  • 4 Gulf grouper fillets (6–8 oz each)

  • 2 tbsp olive oil

  • Salt & cracked pepper

  • 4 tbsp unsalted butter

  • 1 orange (zested and juiced)

  • 1 lemon (zested and juiced)

  • 2 tbsp honey

  • ½ pineapple, sliced into rings

Directions

  1. Preheat your Jupiter Grill to medium-high (400°F). Oil grates lightly.

  2. Pat grouper dry, brush with olive oil, and season with salt and pepper.

  3. Grill pineapple rings for 2–3 minutes per side until charred. Set aside.

  4. Grill grouper for 4–5 minutes per side or until it flakes easily.

  5. In a small saucepan on the side burner, melt butter with citrus zest, juice, and honey. Stir until glossy.

  6. Plate fish with pineapple on top and drizzle warm citrus butter over everything.

  7. Serve with coconut rice or grilled asparagus.
